You might also make some bruschetta. I did the other day, and then took the last little bit and threw it into some scrambled eggs one morning, and that was really tasty. I highly recommend it.
Line a cookie sheet that has sides with aluminum foil and spray with cooking spray. Slice tom's in half and seed. Sprinkle with fresh herbs of your choice (I like a tiny bit of rosemary) and LOTS and LOTS of sliced fresh garlic. Add a little salt and pepper. Roast them in a slow slow oven for three hours or so. Spread the whole divine mess on crusty bread and eat while standing over the stove. Wish that you'd made more and resolve to make more tomorrow. Can be frozen to tide you over the lean winter months. (Also wonderful on pizza.)

Oh, I forgot that this is nice with nice with fresh parmag. cheese shaved over it. Eat hot or cold.
