BTW, ever notice the way goat cheese (at least in Canada) has the profile of a goat and the word "Chevre" on it? as if: a. We're going to forget what a goat looks like, and b. We give a damn how to say it in French!
I love all sorts of cheeses, but I simply could not do without Parmigiano or Grana Padano in the house. No pasta is complete without it, and you can do other lovely stuff with it, too.
